Granola with Dried Fruits

We love granola! It’s never the same, always changing. When we make it, we make a big batch and it will last for a few months! I take advantage of all our dehydrated fruits here, I use whatever I have around and or left over.

4CUPS rolled oats
1CUP coconut flakes
1CUP raw nuts
1cup dried fruit of your choice
2 tsp your favourite spice (cinnamon, cardamom, pumpkin spice, nutmeg, etc)
1 pinch salt
1/3CUP sweetener (honey, maple syrup, syrups)
1/3CUP coconut oil
1 1/2TSP vanilla extract

Dehydrate 125F for 10-12 hours.
Love my dehydrator. It’s half the price of the leading brands and it works just as good!

Love dehydrating Bread! These are bagel chips. Bagels cut thinly, dehydrate 125F couple hours. You can use these for a variety of things!

We dehydrate every kinda bread, all the ends, bits and pieces that don’t get eaten. I even buy day old bread to dehydrate. Most breads I dehydrate, we blend in food processor to make bread crumbs, which we use for a variety of different things.
This time. We took some french buns, I sliced thinly.

Laid them out in a single layer on your dehydrating trays. Dehydrate 125F just a couple hours.

Bread doesn’t take to long! We use these for dips, bruschetta, onion soup, a variety of things. They will last a while if stored properly!

Lime Curd Mini Pies

Pie Crust, homemade or store bought
pre baked
Lime Curd:
3 large eggs
3/4 cup granulated sugar
Pinch of salt
1/2CUP fresh lime juice 
Zest of 1 large or two small limes
4TBSP unsalted butter diced
Place eggs, sugar, salt, juice, and zest in saucepan. Whisk the ingredients together until smooth.
Place over low heat. Stir constantly with a wooden spoon until the mixture thickens, about 4-5 minutes. Add the butter. Stir until smooth.
Remove from heat and pour into jar(s). Makes just shy of 2 cups.

Place Curd in cooked Pie Shells. You can top with some whipped topping but we prefer them just the way they are.

Apple Fritters

These are awesome!! We’ve only made them twice now but have turned out great both times.
1CUP flour
1TSP yeast
1/2TSP cinnamon
1/2TSP salt
Mix top four ingredients in bowl set aside.
Cream in another bowl
2TBSP sugar & 2 large eggs
Add in
Gradually the flour mixture til combined then pour
1/4CUP Milk, mix til incorporated.
To make all the above fritters, I doubled this batch.
Put in Oiled bowl, covered til doubled in size.
I use a well floured surface and roll out dough in a rectangle shape.
I place 1quart of my homemade apple pie filling covering half of the dough-you store bought filling if you want.

They will get pretty big but fritters are suppose to be large

Deep Fry 350 about 3minutes per side. Once Cooled I glazed them in an icing sugar/milk mixture.
