1TBSP sugar
2TSP baking powder
1/2TSP baking soda
1/2TSP salt
4TBSP unsalted crisco or butter, cold, cut into small pieces (I prefer crisco)

18
miniature hot dogs, Smokies or big hotdogs cut in 1/3rds.

Preheat oven to 400ºF. Grease a large baking sheet or I use a silicone sheet. Sift the dry ingredients into a bowl.
Put the butter/margarine pieces into the dry ingredients until mixture is crumbly. Stir in cheese until evenly distributed.
Make a well in the dry ingredients and add the buttermilk/milk. Stir well into a nice ball.
Sprinkle the dough with flour and then turn out onto a well floured counter
With floured hands, pat the dough, I take a floured rolling pin roll out. Roll, then fold in half, roll out, fold other way, roll again. I keep repeating this over and over flipping in half and rolling. It makes for a very flakey layered crust.
I rolled out a large square. Cut in half then cut triangles out of each rectangular piece you have.

One at a time, roll up the sausages in the triangles. Pinch the end piece in bottom and cook that side down. I do a yolk wash on them and add some white & black sesame seeds

Drain! I forgot to take after picture. This will have a nice color, flavour, you should get about 6-8 cups. Pour in bowl, put in fridge overnight. All the fat will come to the top. Now some scrape this off and throw that out. Well that’s awesome stuff and can replace oil in recipes. I put in container, store in fridge and or freezer. I also freeze the stock in 1 1/2CUP portions. Til the day I get up the courage to use my pressure canner so I can bottle it!
Do you cook up your turkey carcasses?
We have the PC Choice brand but this one is just the same.

Sweet & White Potato Chips

Sweet & White Potato Chips » RecipeCollage.com » December 13, 2025
My kids love potatoes chips! I haven’t met too many people, who don’t. Vegetable chips are great, and tastes awesome. I little bit of work but for us, it’s worth it.
I don’t like to use the shield that comes with the mandolin so hubby makes me wear my no cut gloves lol they are great though. It was a nice purchase!

We like things spicy. You can just eat them as they are. Or just add salt. Or a herbed, garlic, onion thing. Or whatever your favorite spices happen to be.
I made up a spice with some paprika, cayenne, & garlic salt.
Do you make homemade potato chips? What do you like to put on them? Do you have favorite dip to make?

Cinnamon Toast

Cinnamon Toast » RecipeCollage.com » December 13, 2025
3 large eggs
1/3CUP milk
Beat well
add on 1/2TSP vanilla and 1TBSP cinnamon.
We like our cinnamon. You can use less or more whatever you prefer.
We would rather use thick slices of homemade french bread. But thick Texas loaves work just fine. Or regular bread. Thick slices do work/taste best we find.

I normally even have to add more cinnamon to the egg mixture half way threw, as we like them loaded with cinnamon.
Dip your breads in the egg mixture on both sides and transfer to hot oiled pan.
I use my Nordicware ware indoor nonstick grill pan as I can do a few at once. Little non stick spray med-high heat. Couple minutes per side. And there done. Serve with syrup, or whipped cream, to peanut butter to mixed fruit to a jam. We like a ton of different stuff on them. You don’t just have to do a syrup all the time.
We love this!

Herbed Stuffing

Herbed Stuffing » RecipeCollage.com » December 13, 2025
This one had 4-5cups of bread crumbs. I dehydrate. I dehydrate just about everything. There is so many different kinds of breads in here. Which I find is what makes this so excellent. All the different textures & flavours.
2 eggs
1/4CUP herbed butter
Celery cut
Onion cut
Garlic
Raw bacon cut in very small pieces
Fresh thyme & lots of sage. Dried is fine as well. Salt/pepper
If you prefer you can saute the onions and celery in a pan before adding it to the bowl.

I add in about 2-3CUPS of hot chicken stock or if I have frozen Turkey stock I use that. Stir til well combined.
