This was a look in my fridge clean out kinda dip night lol. Jar of artichokes cut up Creamed cottage cheese Ricotta Cream cheese Mayo Sour cream Fresh spinach Onion chopped Garlics chopped Salt/pepperSaute spinach, onions, artichokes, garlic with some Vegetable oil. Until all is nicely softenedAdd in about 1/2CUP sour cream, 1/3CUP mayo and all your cheeses. Stirring til well combined and all melted in. You really can’t go wrong with this dip! Great with baguette, crackers, Vegetables, and even pretzels!
Lucky can’t wait to dig in LOL! The holidays are always a bit hard. We have no family nor friends in Alberta. It’s quiet, no one comes to visit. No where for us to go. We have gotten used to it over the years. The kids have gotten used to it. We do our best with what we have.We prepared great food, enjoyed family time, connecting and enjoying each other’s company.After all our goodies the kids got to open 1 present each and we played a few games of hangman & boogles. These taste great. We enjoy them. Peeled boiled 4-5 potatoes til cooked. Drained. Added chopped 1/3CUP butter/margarine & about 2TBSP my homemade garlic chili sauce put lid back on and sit back on warm burner it just came off of. Leave covered for 2 minutes.Take off burner, add 1/2CUP milk.Mash. Real good.I served the mashed with my mini meatloaves and carrots.
I’ve been wanting meatloaf lately. Haven’t made it in many months. Decided today was the day. Took the kids out skating for a few hours this afternoon. I’m pretty wiped. Wanted something easier tonight yet hearty. 1CUP crushed cornflakes 1 large onion, cut 2 lb ground beef 2 eggs 3 garlic cloves, minced 1TSP Worcestershire Sauce 1/4CUP ketchup 1TSP dried parsley 1TSP dried thyme 1TSP each black pepper & saltMix all together. Very well. Instead of making a loaf I wanted to use my oyster cast iron pan. I sure love this pan! I made a flattened circle with meat at bottom of bowl and decided into 12 pieces so they would be all pretty even.I pat balls in my hands and formed them into like a football shape. Squeezed ketchup on-top.
Bake 400 about 35 minutesI served with carrots & garlic chili mashedLove my cast iron oyster pan! We use it for a variety of things
Cheese logs, balls are expensive to buy! I always have cheese in the house and normally a big variety. Were always finding a deal or clearance on cheese! 4TBSP herb garlic cream cheese 4TBSP each extra old white & harvarti TBSP chopped garlic Onion powder Garlic powder Parsley Chili flakes Italian spice Mix well until all incorporatedI put in saran wrap and shape once it’s in there. I place in fridge for atleast 4 hours. I take out and smooch it down into some slivered almonds and cranraisins.
Its funnier and well just tastes better making your own. Knowing it isn’t filled with all these extra fillers.I made this log to go with our Christmas Eve snacks.
